The Dragon is a symbol of bravery. This drawing was the very last designed by our dearest Gianni Gallo, and his wish for this new endeavour.

Varieties and Vines

This is a field blend of white varieties mostly planted side by side vinified together in an extremely unusual way from Piemonte.

Harvest and winemaking

Dragon varieties are as precious as delicate and the first we pick at Baudana every year.
Fermentation lasts for an average of 7-15 days in vertical vats.
The Dragon is then aged till the following spring in stainless-steel tanks, with patience and until the wine blossoms into a full harmony.

Taste imprinting

A pale and bright yellow enriched by dry perfumes of stone, flowers, and summery grass. Dry and slightly savory on the palate, its stinging freshness is well balanced by a warm taste. This is the promise of our Langhe Bianco.

Baudana is a hidden gem among the historical vineyards of Serralunga. Once celebrated, then forgotten, today it is regaining the prestige of its past.

Varieties and Vines

Baudana vineyards encompass 50 years old vines of Nebbiolo located 350 meters above the sea.

Harvest and winemaking

Baudana enjoys amazing soil conditions, thanks to a higher water retention. Harvest usually takes place on the third week of October. Fermentation starts quite fast and runs smoothly for approximately 30 days, followed by another 10 days of maceration. One Slavonian cask is used to ferment most of the grapes, with some stainless-steel vessels used as a backup. Punch-downs and gentle pump-overs are the only operations over the time of maceration. The wine is wracked into oak after malolactic fermentation and spends an average of 32+ months in large Slavonian oak casks.

Taste imprinting

A deep red in the glass introduces aromas of  pure cherries and plums accented with spice, graphite, eucalyptus and licorice. Warm and dry character with firm tannins balanced by a fresh and gentle acidity. A unique soil composition with blue clay translates in a wine with a powerful elegance.

Cerretta is most austere of the estate vineyards. This site produces wines of depth, breed and nobility.

Varieties and Vines

Barolo Cerretta is made by 100% Nebbiolo grapes from the homonymous vineyard in Serralunga.  Grapes are picked from 40 years old wines of multiple biotypes of Nebbiolo, representing an incredible heritage of Luigi’s work.

Harvest and winemaking

Nebbiolo has the longest vegetative cycle among local varieties, and usually is harvested around the third week of October. Fermentation is carried primarily in one large cask. The Cerretta vineyard has always a slow start of fermentation, for 35-40 days on average. Post-fermentation “Cappello sommerso” (submerged cap) follows for another week in greater vintages. Cerretta is aged in large Slavonian casks for 32 months on average.

Taste imprinting

Austere and very mineral expression of Barolo. Aromas of dark cherries and raspberries jump out vividly from the glass. Hints of iron, menthol, new leather add to the depth and intrigue of this wine. Refined and polished, Cerretta has an extra layer of tannins, important structure and a lively acidity which are nearly buried by its exquisitely lush fruit.

A Barolo speaking of his terroir, an expression of Serralunga lifted power coming from grapes belonging to multiple vineyards of the village.

Varieties and Vines

These Nebbiolo vineyards are located in Serralunga with slightly different soil composition. An average altitude of 340m above the sea and 20-30 years old vines complete the identity of this wine.

Harvest and winemaking

The harvest takes place in the second half of October, enjoying till the last moment of the rich nourishment the soil can offer.
The grapes are sorted by hand. Fermentation usually lasts 25 days long before the wine is moved into large casks for aging.

Taste imprinting

A vivid ruby red colour with sharp fragrances of red raspberries, plums and cherries.
Enriched by complex sensations of spices and liquorice, at the taste this Barolo is warm and soft, with a well-rounded body and refined tannins. The structure is the one of Serralunga, powerful and elegant in all its forms.
